Delicate rice, fresh fillings, and a touch of caviar come together for a refined yet easy-to-make dish, perfect for special occasions or a light homemade treat.
Prepare the rice: Cook the sushi rice according to package instructions and season with rice vinegar, sugar, and salt. Let it cool slightly before assembling.
Assemble the rolls: Place a sheet of nori on a bamboo mat, shiny side down. Spread a thin, even layer of rice over the nori, leaving a small border at the top.
Add the fillings: Arrange cucumber and avocado slices across the center. Add a small spoonful of caviar on top of the vegetables.
Roll and slice: Using the bamboo mat, roll the sushi tightly. Slice into even pieces with a sharp knife.
Serve: Serve immediately with soy sauce. Add wasabi and pickled ginger on the side if desired.

Notes
Use a very sharp knife and wipe it with a damp cloth between cuts for clean slices.
Add the caviar just before rolling to preserve its texture and flavor.
For a simpler version, reduce the fillings and let the caviar be the star.
